Chromium is the parent project of the Google Chrome browser, and is open source.
The Chromium open-source project can ask the Google Chrome browser "who's your daddy?". With a release cycle of six weeks, every Google Chrome version is simply the latest stable build of Chromium. The difference is that Chromium does not have Flash Player built-in, uses different artwork, and won't auto-update if you prefer it that way. All functionality is identical, including the rendering engine (WebKit), theme/extension compatibility and of course the user interface.
You'd want the latest snapshot of Chromium if you want to try a browser that might conceivably use less RAM and perform faster than the latest Google Chrome. It is also a good option if your priorities include a more-portable browser. It is on even keel with Mozilla's Firefox with regard to OS compatibility, as builds are available for Windows (only 32-bit binaries compiled), Linux (32/64-bit x86 and ARM) and Mac OSX.
The latest version for Windows weighs in at 42.5 MB, and can be downloaded as a ZIP file from the usual download sites, or as a pre-built portable app. To list a few, its features of include:
